Meatloaf Recipe Designed for Your Budding Toddler

My mom created this Turkey Meatloaf recipe for our 11 month-old daughter. The idea was to offer a protein dish, in the form of meatloaf, that was tasty, easy to eat, and not dry. The result is a super healthy meatloaf that everyone enjoys! Our daughter has always been a good eater, she likes black olives of all things, loves bean dishes, lentils and meals with lots of flavors. But this meatloaf is hands down her ultimate favorite. She devours it! So give this recipe a try for your little one and let me know how they like it!?

(Lunch includes the turkey meatloaf, peas, steamed pears, and blueberries)

1 lb. Ground Turkey
4 or 5 Tbl. tomato paste  (even more is probably ok)
1 Tbl. olive oil
2 slices multi-grain bread, chopped fine
1 egg
1 cup (or more) frozen chopped spinach (or 1 bag fresh – chopped fine)
grated onion (a teaspoon or two)
1 Tbl. mixed Italian seasoning (or a combination of oregano, basil, parsley, etc.)
salt and pepper to taste

Mix all together in a bowl.  Turn into a glass or ceramic baking dish and with a rubber spatula, form the mixture into a low, long loaf.  Bake, uncovered, at 375 degrees F for about 1 – 1 1/2 hours OR until it reaches an internal temp of 165 degrees F.  You can put grated cheese on top for the last 15 minutes or so.
